Most chickens reach mature laying age at 16-30 weeks, depending on the breed. The rate at which they lay, as well as egg size, will also vary based on breed.
Chickens are born with the number of eggs they will lay during their lifetime. Once they begin, they will lay what is referred to as a pullet egg. These eggs are smaller in size as the chicken begins to regulate their laying cycle.
Most chicken breeds will reach their peak at 2 years of age. As they age, the number of eggs they lay on a weekly basis will decrease until they no longer lay. A chicken will lay no more than every 25 hours, this can vary depending on breed, diet, molting, and broodiness.
Each individual breed page will detail the breed's maturity, production, and egg size under the "Characteristics" tab.
